Being busy and always on the go does not mean you have to sacrifice eating well. Fast food can be fast without being processed. The team at Before & After Plumbing and Drain are used to helping busy people. Here are our suggestions for delicious, fast meals. These dishes taste wonderful and are easy to make in a short period of time.

1. Breaded Pork Cutlet with Avacado and Shredded Kale Salad

Preparing the pork cutlet is as easy as flattening it, dredging it through mixtures of egg, flour and panko breadcrumbs, and cooking for only a couple minutes per side. The salad is even easier to prepare. While the emphasis is on the avocado, use whatever greens you prefer.

The combination of the light panko texture on the pork with the creamy avocado will make this dish a favorite in your rotation of quick and easy meals.

2. Stovetop Chicken Pot Pie

Who said you cannot quickly make comfort food dishes? Chicken pot pie is a favorite for many families but it takes well over an hour to prepare. This recipe shortens that to 30 minutes and still delivers on comfort and flavor.

The traditional pie crust is replaced with your favorite heat-n-eat buttermilk biscuits. The filling includes a thick creamy sauce, lots of vegetables, and of course, chicken. A major plus for a dish like this is that you can improvise and switch out vegetables to make it just the way you and your family like it.

3. Sausage, Mushroom and Black Olive White Pizzas

Maybe you are rushed because you just got home and want to sit down and catch a game on TV. In the time it would take you to have a pizza delivered you could make this wonderfully fresh and flavorful dish.

The crust in the recipe is ciabatta baguettes, but you could pick any bread you like or use ready-made pizza dough. The toppings include thinly sliced chicken sausage links, olives, mushrooms, spinach, and mozzarella. Experiment with this dish and try other ingredients. You will see that there is an endless number of possibilities for you to make homemade pizza using almost anything you have around the house.

4. Escarole and Bean Soup

Perfect for cold days, when all the family wants to do is eat and curl up under blankets, this hearty soup is a simple combination of cannellini beans, escarole, garlic, and broth. Season it to your preferred taste and serve it with bread.

5. 5 Ingredient Instant Pot Mac and Cheese

This dish is quick and easy no matter how you prepare it, but owners of the Instant Pot will find that cooking the macaroni takes less than five minutes. Once the pasta is prepared, add the cheese, evaporated milk and butter. The result is a delicious home cooked mac and cheese that does not contain any of the additives used in boxed mac and cheese.

6. Shrimp Stir Fry

Jumbo shrimp is perfect as a part of your meal rotation for busy days. They only take about three minutes to saute. This stir fry is full of flavor with garlic, grape tomatoes, zucchini, and basil. For variety, alternate serving on a bed of rice, pasta, or even potatoes.

7. 20-Minute Tuscan Chicken with Penne Pasta

A rich creamy sauce combined with chicken and penne pasta sounds delicious and can be made in less than 30 minutes. While the pasta is being prepared, simmer spinach, garlic, an assortment of spices and herbs, broth, and shredded rotisserie chicken. Make a simple cream sauce, blend it all together, and you have dinner and maybe even leftovers for lunch the next day.

For each of these recipes, you can try different ingredients and even take one cuisine and turn it into another. That flexibility makes cooking more enjoyable, even for someone with not a lot of time to prepare meals.
